Time: 4-6 hours
Feeds: 3-4 people
Ingredients:
- 1 bag Trader Joe’s party size mini frozen meatballs
- 1/4 cup soy sauce
- 1/2 cup pineapple juice
- 1/3 cup beef broth
- 1/3 cup brown sugar
- 1 tablespoon honey
- 1-2 cloves garlic minced
- 1/4 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes
- 1 teaspoon sesame oil (optional)
- 2 tablespoon cornstarch
- Cooked white rice, for serving
- 3 tbsp kewpie mayo, for serving
- 1 tbsp sriracha, for serving
- Sesame seeds, for serving
Directions: Place meatballs in a slow cooker.
To make the sauce, whisk together remaining ingredients (minus ingredients meant for serving) in a medium bowl until combined, making sure the cornstarch is very well mixed in. Pour sauce over meatballs. Cover and cook on low for 4-6 hours, or until sauce bubbles and thickens. Be sure to check in on the meatballs every once in a while to ensure the sauce isn’t reducing too much and causing them to burn. To speed up thickening, you may turn the slow cooker to high for the last hour of cooking time. If the sauce ends up getting too thick for your liking, you can thin it out with a little water and a touch of soy sauce.
Serve over cooked rice. If desired, top with sriracha mayo and/or sesame seeds.
