Ingredients:
- 2 cups cooked white rice
- 4 Chinese sausages
- 3 eggs, whisked
- 3 scallions, chopped
- Low sodium soy sauce, to taste
- Dark soy sauce, to taste
- 1 tbsp Shaoxing wine
- White pepper, to taste
Directions: On the day you’re planning to have the fried rice, cook some plain white rice ahead of time. You don’t want to use freshly cooked rice as there is a ton of moisture and it might stick. You’ll want this rice to be at least 4 hours old but rice from the night before is even better.
Slice the Chinese sausages into thin rounds and add to your air fryer. Air fry at 370 degrees for about 5-8 minutes until they’re starting to render and get crispy. Set these aside until it’s time to add them to your rice. You’ll also want to prep your scallions and eggs so that you have everything ready for cooking.
Heat your flat top on medium high heat and start by cooking your eggs. Once you have scrambled the eggs, set them aside and add the rice to the surface. At this point, you’re going to add the sauces to give the fried rice its signature taste and color. Other than the Shaoxing wine, everything is going to be a bit dependent on your tastes and how old the rice is. If the rice is fairly fresh, it might absorb more of the sauce than older rice so you just have to keep an eye on things. I think keeping in mind a ratio of about 3:1 low sodium soy sauce to dark soy sauce is going to be a good starting point to getting the rice where you want it to be. Once you have the sauce added, you can add the Chinese sausage, egg, scallion, and white pepper. Taste the rice and see if there’s anything else that it could use. Serve and enjoy!
Notes: When we had our fried rice, I made some frozen potstickers to go with and also a veggie for me. Obviously, there are so many different proteins that you could add to fried rice so have fun with it! You could do chicken, shrimp, beef, spam, tofu, etc. instead of the Chinese sausages.
