
Time: 30 minutes
Feeds: 2-3 people for dinner / 4-6 people for a snack or game day food
Ingredients:
- 2 cups cooked, shredded chicken, preferably thighs
- 1 8oz package cream cheese, softened
- 1/2 cup Frank’s Red Hot Buffalo sauce
- 1/2 cup ranch dressing
- 1/2 cup sharp cheddar cheese, shredded, see notes
- Fritos, for dipping
Directions: Preheat the oven to 350 degrees. Add the chicken, cream cheese, buffalo sauce, ranch dressing and cheddar cheese to a large bowl and stir until everything is very well incorporated. Spoon into a shallow quart size baking dish.
Add the dip to the oven and bake for about 20 minutes, or until heated through and starting to bubble on the edges. Remove from oven and let cool for 3-5 minutes. Use the Fritos to dip and serve with fruit or veggies on the side.
Notes: Of course, this is great for a game day snack or appetizer but sometimes we like to have this for a dip dinner. Is it the most healthy thing we’ve ever eaten? No. But it’s a fun dinner to have every once in a while. The original recipe calls for blue cheese instead of cheddar but since Stew isn’t a blue cheese guy, we make the switch.
