Pesto Pasta with Chicken Sausage and Cherry Tomatoes

Ingredients:

  • 4-5 chicken sausages, sliced into fairly thin rounds
  • 8 oz any shape of short pasta
  • 1/3-1/2 cup jarred or fresh pesto
  • 1/4 cup parmesan cheese
  • 1 cup whole cherry tomatoes

Directions: Get a pot of water on the stove and heat on high, bringing the water to a boil. While the water is heating, add the pieces of chicken sausage to a medium skillet and add a tablespoon of olive oil. Cook over medium heat to heat the sausages through and get them browned slightly. Once they’re the color you like, decrease the heat to the lowest setting to keep them warm, stirring every once in a while to make sure they aren’t getting too dark.

Cook the pasta according to box directions. When fully cooked, remove about a cup of pasta water and then drain the noodles in a colander. Add the noodles to a bowl and spoon over the pesto. Start with the smaller amount and then adjust accordingly to how pesto forward you want the pasta to be. You can always add a little pasta water as well to thin it out if you’d like. Add the parmesan cheese and cherry tomatoes and toss together. Serve with the chicken sausages on the side and enjoy!
