Scrambles

Time: 20 minutes

Feeds: 2 people


Ingredients:

  • 6 pieces of bacon
  • 6 eggs
  • 4 oz cheddar cheese
  • Green onion, if desired

Directions: Take the bacon and either slice and cut with scissors into small pieces. Add these to a nonstick skillet and start to render over medium heat. Stir frequently while cooking to ensure even color and cook to desired crispiness. Remove from the pan and add to a paper towel lined plate. Remove most of the excess fat from the pan as well and set aside.

In a bowl, crack six large eggs and scramble together thoroughly. You should also grate your cheddar cheese at this point so it’s ready to add to the scramble when you’re ready.

Put the nonstick skillet back on the stove over medium heat and melt one tablespoon of butter. Once the butter is melted and starting to foam slightly, add the eggs and start to scramble. Once they’re starting to come together add in the bacon and cut green onion directly into the pan with scissors if using. You have the option to either put the cheese into the pan with the eggs when they’re just finished cooking and incorporating like that or you can add the cheese once the eggs are portioned onto the plate. We generally add the cheese on top once the eggs are out of the pan.

Season with salt and pepper and enjoy!


Notes: This is a great recipe that can be altered in so many different ways but the above recipe is generally how we make our scrambles. You can switch out the bacon for sausage or ham and you could also add a wide range of veggies including mushrooms, peppers, asparagus, etc. The world is your oyster when it comes to scramble ingredients.
