Ingredients:
- 2 store bought croissants
- 2-4 eggs
- 2-4 slices of Colby jack cheese
- 6 slices of crispy bacon
- Spicy mayo, if desired
- Quick arugula salad or fruit to serve on the side, if desired
Directions: This is a great quick dinner that’s mostly just assembling other than cooking the eggs and bacon. The bacon can be cooked either in the oven on a sheet tray or in a skillet depending on how you’d like to do it. We also have our eggs cooked over hard with the yolk cracked and the cheese melted on top.
Once all of the elements of the sandwich are ready, it’s time to assemble! Start by splitting the croissant in half and spreading on the spicy mayo if desired. Top with 2-3 slices of bacon per sandwich followed by an egg or two depending on how many you wanted. Place the top of the croissant on the sandwich and it’s all set! If you’d like to have an arugula salad to go with, quickly toss arugula with olive oil, balsamic glaze, salt, and pepper and place on the plate. Otherwise, you could have some fruit with it instead.
