Ingredients:

  • 1 head of romaine lettuce, broken into bite sized pieces
  • 6 strips of bacon, diced
  • 4 hard boiled eggs, sliced
  • 4 oz thick sliced deli turkey, diced
  • 4 oz Colby jack cheese, small diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup green onion, thinly sliced
  • Ranch dressing
  • Salt and pepper, to taste

Directions: This dinner is always great because the prep is easy and it’s something that can just be thrown together. You can cook the bacon either in strips in the oven or diced up in a pan. I like to hard boil my eggs in the instant pot but you’re more than welcome to do them how you like. The key is that they’re done earlier in the day so that they can cool properly. Otherwise, it’s just a bunch of knife work for the turkey, cheese, tomatoes, and green onion.

In a large bowl, assemble your salads. Add your lettuce, bacon, eggs, turkey, cheese, tomato, and green onion. Top with ranch dressing and toss to make sure everything is dressed to your liking. Season with salt and pepper and enjoy!


Notes: Cobb salads are great because you can really make them your own! If you don’t want turkey, you can grill some chicken instead. Blue cheese is a great substitute for Colby jack and you could have any dressing you’d like instead of ranch! This is just how we tend to have ours.
