Ingredients:
- 4 slices sourdough bread
- 2 tbsp butter, for the griddle
- 4 eggs
- 4 slices cheddar or American cheese
- 4 slices havarti or Swiss cheese
- 1 7oz container deli ham, see notes
- Hot sauce or spicy mayo, if desired
Directions: Preheat an electric griddle to 250 degrees and melt the butter on the griddle top. Add your slices of bread open face style and begin to build the sandwiches. Top the slices of bread with your cheeses and cover with a sheet tray if possible. Allow the bread to toast and cheese to melt while you cook your eggs. Traditionally these sandwiches are made with scrambled eggs but Stew likes to have his with fried eggs so it’s up to you and what you prefer! Once the eggs are finished cooking, it’s time to assemble your sandwiches.
On one half of your sandwich, add the eggs and then add your desired amount of ham to the other half. Season the eggs with salt and pepper and then close up the sandwich, continuing to toast on the griddle if necessary. You can add hot sauce or spicy mayo to your sandwich as well but I prefer to have them on the plate to dip when I want a bite with some. Cut in half or leave it whole and serve with fruit or hash browns on the side.
Notes: We prefer to try to find a ham that’s smoked and not too sweet for this sandwich. Although I love a sweet and spicy moment, a nice salty ham is ideal for this application. I usually get the Oscar Mayer packaged deli meat and tend to shy away from the Honey or Black Forest ham for these sandwiches.
