Ingredients:
- 2 tbsp avocado oil
- 2 cups day old and/or chilled white rice
- 2 eggs, beaten
- 1 green onion, finely sliced
- 1 tbsp shaoxing wine
- 1 tbsp dark soy sauce
- 3 tbsp soy sauce
- 1/2 tsp white pepper
- 10 frozen potstickers or other type of Asian dumplings
Directions: Place a large nonstick skillet on the stove and start heating over medium heat. Add the avocado oil and heat well, followed by the rice. Toss the rice around to break up clumps if present and start heating through. When the rice is hot and has crisped just slightly, make a well in the center of the pan, add a touch more avocado oil and then the eggs stirring just the eggs occasionally to scramble together. Once the eggs are just barely wet, stir the rice and eggs together to combine.
Add the shaoxing wine to help deglaze the pan if needed. This gives fried rice the typical takeout flavor that we all love! Next add the dark soy and regular soy sauce to the pan and stir everything together. Season with the white pepper adjusting the amount to taste and give the fried rice a try. You’re welcome to add any extra soy sauce if needed. Add the green onions at the end and set aside with a lid on until the rest of your dinner is ready. If you need to keep it warm for a longer period of time, have the burner on the lowest setting and give it a stir every once in a while to ensure the rice isn’t burning on the bottom of the pan.
Cook the potstickers according to package directions and serve along side the rice for a quick and easy dinner!
