Anthony Bourdain Mortadella Sandwiches

Ingredients:

  • 2 hamburger buns, preferably potato rolls
  • 8 oz mortadella
  • 4 slices provolone cheese
  • Mayonnaise, for the bun, if desired
  • Yellow mustard, for the bun, if desired but highly recommended

Directions: Start heating a flat top, electric griddle, or nonstick pan on medium heat. Spread softened butter onto the two buns and place on the heated surface to get a nice toast on them. Once toasted, set aside. Separate the mortadella into four 2 oz portions and add them to the heated surface as well in little piles. You don’t want the slices of mortadella to be flat as you want each of the slices in the portion to get crisped and browned. Leave the mortadella alone to ensure the nice crisp and then flip to cook the other side.

Once each side of the little mortadella patty is cooked to your liking, top each with a slice of provolone cheese and let melt. When the cheese is melted, add two portions to each bun. Now you can add mayo and mustard as desired. I highly recommend using the yellow mustard for this as it cuts through the richness of the mortadella. Put the sandwich together and enjoy! Serve with chips or fruit if you’d like.
