Ingredients:
For the dressing:
- 1/3 cup peanut or vegetable oil
- 1/3 cup unseasoned rice vinegar
- 1 tbsp Chinese hot mustard
- 3 tbsp low sodium soy sauce
- 1 tsp sriracha
- 1/2 tsp sesame oil
- 1/4 cup kewpie mayo
- 3 cloves garlic
For the salad:
- 2 cups cooked, shredded chicken
- 1/2 head Napa cabbage, shredded
- 1 cup red cabbage, shredded
- 1/2 cup cilantro, roughly chopped
- 1 small carrot, julienned
- 4 scallions, thinly sliced
- Crispy chow mien noodles, for garnish
Directions: Start with making the dressing. In a blender or a food processor, combine the peanut or vegetable oil, rice vinegar, mustard, soy sauce, sriracha, sesame oil, kewpie mayo, and garlic cloves and blend until smooth. Taste and adjust any measurements accordingly.
To assemble the salad, toss together the Napa and red cabbage, cilantro, carrot, and scallions. Add your desired amount of this salad mix to separate bowls and top with chicken. Dress with what you consider the appropriate amount of dressing and garnish with the crispy chow mien noodles.
