Baked Chicken Meatballs

Recipe from A Pinch of Yum

Time: 30 minutes

Feeds: 3-4 people


Ingredients:

  • 1 pound ground chicken
  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1/2 cup grated Parmesan
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • black pepper to taste

Directions: Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

Add all ingredients to a bowl and mix together with a fork or with your hands. You want everything well combined but not so mixed that it gets dense. No one likes dense balls. Portion out the meatballs into 2-3 tablespoon balls and add to a parchment lined cookie sheet.

Bake the meatballs for 15-20 minutes temping them to make sure that they’ve hit 165 degrees.


Notes: These meatballs are super versatile and can be used in a lot of different ways. We like to toss these in Buffalo or BBQ sauce to have like wings with a salad, fruit, or some mac and cheese. This is the recipe that we use for our Marry Me Chicken Meatballs and Instant Pot Butter Chicken Meatballs. They’re even good enough to eat on their own!
