Bang Bang Chicken Skewers

Ingredients:

For the chicken:

  • 4 chicken thighs, cut into bite sized pieces
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp chili powder
  • 1/8 tsp curry powder
  • 2 tbsp avocado oil

For the sauce:

  • 6 tbsp kewpie mayo
  • 3 tbsp sweet chili sauce
  • 1 tbsp sriracha sauce, optional
  • Rice for serving

Directions: Cut the chicken into bite sized pieces. Next season with salt, garlic powder, onion powder, paprika, chili powder, and curry powder. Drizzle with the avocado oil and mix so that the chicken pieces are well coated in the seasoning blend. The avocado oil will help the skewers to not stick. Take your skewers and evenly distribute the chicken amongst 4 or 5. We like to use the double pronged metal skewers. They ensure that the meat is secure and makes flipping once they’re on the grill very easy.

Preheat the grill to about 400 degrees and while it’s heating, make the sauce. We use the sauce to glaze the chicken once it’s finished cooking and will drizzle extra on the chicken and rice once everything is assembled. Combine the kewpie mayo, sweet chili sauce, and sriracha. Adjust the ratio as needed based on your liking. You can use regular mayo if that’s all you have but the kewpie mayo is so much better. Oftentimes, I will put some of the sauce in a separate bowl so that Stew can take it outside for the glazing but you don’t have to dirty another dish if you don’t want to.

Once the grill is heated, add the chicken skewers. Cook on the first side for about 5-6 minutes and then flip, continuing to flip every 5 or so minutes until the chicken is cooked through. It’s important to use a thermometer to check to make sure the chicken is cooked through, especially with skewers. When they’re just meat like this, they can be much denser than expected. Once the chicken is fully cooked, we like to brush the skewers with a bit of a sauce to make a glaze type situation. When both sides have been glazed, remove from the heat and let rest for a few minutes.

Remove the chicken from the skewers and add to a plate with rice. Top with any desired extra sauce and enjoy!
