BBQ Chicken Drumsticks

Time: 30 minutes

Feeds: 2-4 people


Ingredients:

  • 8-10 chicken drumsticks
  • Rodney Scott rib rub (see recipe below in notes)
  • BBQ sauce for glazing and serving

Possible sides:

  • Corn on the cob
  • Baked beans
  • Pasta salad
  • Mixed greens salad
  • Cornbread

Directions: Remove the chicken drumsticks from the package and pat dry with a paper towel. Season generously with the rib rub and set aside.

Heat a propane grill on high until it’s about 400 degrees and then add the drumsticks to the grates. Cook for about 12-15 minutes, turning every 2-3 minutes or so, until the chicken temps to 170 degrees. At this point, you should glaze with the BBQ sauce. Depending on the thickness of the sauce, you might want to thin it just slightly so that you can brush it on evenly. Glaze the one side and then turn to brush the other side. Once the first side is getting sticky, flip and cook the other side for another minute or so. When they’re glazed to your liking, you can pull them from the grill and place them on a sheet tray or platter. It’s best to let these rest for at least 3-5 minutes before serving.

We like to serve our drumsticks with corn on the cob and baked beans usually but they’re so versatile and would be great with a ton of different sides!


Notes: The Rodney Scott rib rub is obviously meant for ribs but we’ve found that it’s really versatile and can be used in a lot of different ways! You’ll find the recipe for the rub below. This recipe makes 2 cups of rub so we keep it in a sealed container to use when we need it.

Rodney Scott Rib Rub (makes 2 cups so feel free to halve the amounts if you want to)

  • 1/2 cup Diamond Crystal Kosher salt
  • 1/4 cup MSG
  • 1/2 cup coarsely ground black pepper
  • 1/4 cup paprika
  • 1/4 cup chili powder
  • 1/4 cup packed brown sugar
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tsp cayenne pepper
