Breakfast Burritos

Inspired by The Pioneer Woman’s breakfast burritos

Ingredients:

  • 1/2 lb original Jimmy Dean sausage
  • 1 tbsp butter
  • 6 eggs
  • 1/2 tsp Johnny’s seasoned salt
  • 4 oz Monterey Jack cheese, shredded
  • 2 burrito sized tortillas
  • Cholula or Smoky Aardvark hot sauce (optional)

Directions: Heat a large, nonstick skillet over medium heat. Add Jimmy Dean sausage and break up into smaller pieces. Continue cooking, stirring every minute or 2 until browned and cooked through.

Crack 6 eggs into a bowl and season with Johnny’s seasoned salt. Whisk together. In the same pan with the Jimmy Dean sausage, melt 1 tbsp of butter. Add eggs once the butter is melted and cook, stirring with a rubber spatula until soft scrambled. You want the eggs set but not dry and getting any color.

Take a damp paper towel and place on top of 2 tortillas on a microwave safe place. Heat the tortillas in the microwave for 1 minute together or 30 seconds on their own. Place shredded cheese on the bottom of the tortilla followed by the egg and sausage mixture. Add more cheese on top if desired. Finish with a bit of hot sauce of your choosing and then close up burrito style.


Notes: These burritos are very versatile and can be changed to make them your own. You can change the meat inside, add any veggies or potatoes you might want, or change the cheese to one you like more. No matter what, you can’t beat a good breakfast burrito!
