Buffalo Chicken Wraps

Ingredients:

  • 2 burrito sized tortillas
  • 2 servings of frozen chicken nuggets
  • Shredded iceberg lettuce
  • Canned, sliced black olives
  • 4 oz Colby jack cheese
  • Ranch dressing

Directions: Using your air fryer, cook the chicken nuggets according to package directions. I like to use the Just Bare chicken nuggets that you can find at Costco since they’re very Chick Fil A esque. You could always grill or roast some chicken thighs for this too and they would be great. Once the chicken is cooked, transfer it to a bowl and toss with buffalo sauce. Set aside for assembly.

Prep the rest of your ingredients – shred the iceberg lettuce if you didn’t buy pre shredded, drain the black olives of their juice, and shred the cheese.

Next, it’s time for assembly. Get an electric griddle or pan heating on medium as we’ll use this to seal and toast our tortilla. Place a tortilla on a plate and cover with a damp paper towel. Microwave for 30 seconds and flip over once it comes out. Layer the shredded lettuce, olives, chicken tossed in buffalo sauce, ranch dressing and half of the cheese until the wrap is looking how you want it to be but being careful not to overload the tortilla. Wrap everything up and place seam side down on the griddle or in the pan. Let toast for about a minute or 2 until the seam is sealed. Flip and toast the other side if you’d like.

Repeat this process with the other tortilla and enjoy!
