Ingredients:
- 4 slices of white bread, see notes
- 4 eggs
- 4 tbsp butter, very soft or melted so it’s easily spreadable
- Bacon to serve on the side, if desired
- Fruit to serve on the side, if desired
Directions: This is a recipe where having an electric griddle is super handy! Of course, this can be done in a nonstick skillet as well but my recipe is going to be written out with an electric griddle in mind.
First, prep the bread. It’s important that the bread is big enough to make a hole in the middle. You can’t create a gap in the crust at all. Using a cup, cut out the middle of the piece of bread and set aside. Butter both sides of the bread including the middle piece that was cut out and set aside.
Preheat the griddle to 275-300 degrees. Place the bread on the griddle with the middle bread toasting separately and get the first side toasting. Once it’s starting to get color, flip them over and add a bit of butter to the middle to prevent the egg from sticking. Crack the egg into the middle of the bread and start to cook, lowering the heat if you need to. Once the egg has cooked about half way and the bread is toasted some, flip the bread over and let it cook a bit more on the other side. You’ll want the whites of the egg to be set but the yolks still runny. Once the egg is cooked and bread is toasted to your liking, remove from the griddle and onto a plate, seasoning with salt and pepper if desired. Be sure not to neglect your middle toasts! They’re honestly the best part of eggs in toast. Serve with bacon and fruit or have them all on their own.
