Greek Orzo Pasta Salad

Time: 30 minutes

Feeds: 4-8 people depending on if you’re serving it as a main or as a side


Ingredients:

  • 1 lb orzo pasta
  • 1 red bell pepper, finely diced
  • 1 yellow bell pepper, finely diced
  • 1/2 red onion, finely diced
  • 6 oz crumbled feta cheese
  • 1/2 cup sliced Kalamata olives, drained
  • 7 oz Cheese Fantastico salad dressing, plus more if needed
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried dill

Directions: Start by bringing a pot of water to a boil on the stove. Cook the noodles according to package directions and then drain, rinsing under cold water to stop the cooking process and bring the noodles to room temperature at least. Set aside until you’re ready to assemble the salad as a whole.

Continue on by chopping your peppers and onion, crumbling your feta, if needed, and draining your olives.

Next, add the noodles, veggies, feta cheese, and olives into a bowl and mix to combine. Next add the salad dressing as well as the salt, pepper, dried oregano, and dried dill. Stir everything together and give it a taste to see if there’s anything else it might need seasoning wise.

This recipe is best made at least a couple of hours before you’re planning on eating it. When you’re ready to serve the pasta salad, give everything another stir and decide if it needs a little more dressing or not. Sometimes it absorbs and you’ll need a touch extra.


Notes: You could absolutely add a protein to this as well to make it a more complete main dish! Some grilled or roasted chicken would be great. You could even do some gyro meat or sliced lamb to tie in the Greek theme.
