Jalapeño Popper Chip Bites

Ingredients:

  • 1 bag Tostitos Scoops chips
  • 1 8 oz package of cream cheese, softened
  • 1/2 cup sour cream
  • 1 egg
  • 2-3 jalapeños, seeded and finely diced
  • 2 green onions, finely chopped
  • 1 package of bacon
  • 1 tsp garlic powder
  • Parmesan cheese, to top before baking

Directions: Start with frying off your bacon. Remove the bacon from the package and cut into small strips. Add to a large skillet and place on the stove over medium heat. Render the bacon and continue to cook until it’s crispy and browned. Remove from the pan with a slotted spoon into a paper towel lined dish and set aside to cool slightly.

Preheat the oven to 400 degrees and line a baking sheet with parchment paper. Mix the cream cheese, sour cream, and egg together. Add in the jalapeños, bacon, green onions, and garlic powder until well combined.

Arrange the scoops cup side up on the baking sheet and add about 2 tsp of filling into each one. A small cookie scoop is great to use for this. Sprinkle parmesan cheese over the top of each chip and add to the oven, baking for 10-15 minutes or until the filling and chips are starting to get some color. Serve immediately!
