One Pot Pasta with Italian Sausage

Feeds: 4-6 people


Ingredients:

  • 1 lb Italian sausage, hot preferred but mild works great as well
  • 4 cloves garlic
  • 1/4 tsp red pepper flakes, omitted or added to to taste
  • 1/2 tsp dried basil
  • 1 28 oz can crushed tomatoes
  • 4 cups water
  • 1 lb rotini pasta
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1/2-3/4 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese

Directions: Heat a Dutch oven over medium heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks. Stir in garlic, red pepper flakes, and dried basil, and cook, stirring frequently, until fragrant, about 1 minute; season with salt and pepper, to taste.

Stir in tomatoes and bring to a simmer until slightly thickened, about 8-10 minutes. Stir in uncooked pasta and water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-16 minutes.

Remove from heat; stir in Parmesan and heavy cream. Top with mozzarella and cover until cheese has melted, about 2 minutes.

Serve immediately, garnished with additional parmesan cheese if desired.
