Ingredients:
- About 2 lbs of party wings, see notes
- Salt and pepper, to taste
- 4 tbsp butter
- 4 tbsp buffalo sauce
- 4 tbsp BBQ sauce
- Ranch dressing, to dip if desired
- Carrots or celery, on the side if desired
Directions: Preheat the oven on convection to 375 degrees. These can be made not on the convection setting as well but the air flow in the convection oven helps with browning. Remove the chicken wings and place on a parchment lined baking sheet skin side down in an even layer, giving as much space around the wings as you can allow. Once on the sheet, season the side of the wing facing up with salt and pepper. You’ll want to season generously but keep in mind that you will be seasoning the other side after the first flip of the wings.
Place the wings in a preheated oven and set a 20 minute timer. Once the timer goes off, take the wings out of the oven to flip them all over and season the other side with salt and pepper as well. Place back in the oven and finish cooking for another 20 minutes. You want the skin to get crispy and the wing itself to be nice and tender.
While the wings are in for their second cook, you can start to get the sauces ready. In two separate skillets, melt 2 tbsp of butter in each and add the buffalo and BBQ sauce. We like to do 2 different sauces with our wings as I like buffalo and Stew likes BBQ but they’re your wings and you can do whatever you’d like with them! Simmer until the sauce is emulsified with the butter and turn off the heat.
After the second 20 minute cook, check on your wings and make sure they’re browned to your liking. If not, you can leave them in for a little extra time or you can place them under the broiler for a couple of minutes but be sure to keep a close eye on them. Remove them from the oven when they’re crisped to your liking and add however many you’d like to the two separate sauces. Coat in the warm sauce and move to plates. Serve with ranch dressing to dip in if desired. We like to have carrots on the side as well.
Notes: When buying our wings, we like to get the party wings that include the drumettes and the flats. Sometimes you can find just flats in a pack which is our preference. I generally get two packs of wings for the two of us to share since we don’t have much to go with it.
