Pork Tenderloin with Garlic Angel Hair Pasta

Ingredients:

  • 1 Hormel marinated pork tenderloin, preferably the lemon garlic flavor
  • 3 tbsp butter
  • 4-5 garlic cloves, minced
  • 3 cups chicken stock
  • 8 oz angel hair pasta
  • 3/4 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1 tsp Trader Joe’s Aglio Olio seasoning blend, see notes
  • Balsamic glaze, for dipping, if desired

Directions: Preheat your oven to 400 degrees and line a quarter sheet tray with foil. Add a mini cooling rack that fits into the quarter sheet and place your pork tenderloin on top of that. The rack helps the heat circulate and for the tenderloin to cook evenly without getting over colored on the bottom. Insert an oven safe thermometer into the tenderloin to keep an eye on the temperature. Once the oven is preheated place the tenderloin in the oven and bake until the tenderloin is temping to 140 degrees. This is not the olden days of cooking your pork to 165 degrees. It’s totally safe to cook it to a more medium finish and it’s so delicious and juicy that way! Remove from the oven when the pork is cooked to your liking and set to the side to rest.

When the pork is about 5 degrees away from your target temperature, start the noodles. In a large saute pan, melt the butter over medium heat and add the garlic. Cook until fragrant and add the chicken stock. Increase the heat to medium high and bring the chicken stock to a boil. Once boiling, add the pasta and bring back down to medium heat to simmer. Simmer for 6 or so minutes until the noodles are cooked through. Add the heavy cream and stir to combine. If it’s looking a bit more brothy than you would like it to be, simmer for another minute or two but don’t overdo it as you don’t want the noodles to become soggy. Remove from the heat and add the parmesan cheese and aglio olio seasoning blend. Stir to combine and serve immediately with the sliced pork tenderloin and balsamic glaze on the side if desired.


Notes: The Trader Joe’s aglio olio seasoning blend is really great and adds a little extra something to cream based pastas. If you don’t want to buy it or don’t have a Trader Joe’s near you, it’s a blend of dried herbs and veggies including minced garlic, parsley, red bell pepper, red chili pepper, and salt. Alternatively to the seasoning blend, you could top with a little bit of dried parsley.
