Ingredients:
For steak:
- 1 flank steak (about 1 1/2-2 lb)
- 1/2 cup Dijon mustard
- 3 tbsp honey
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp paprika
- Red pepper flakes (to your liking, can omit)
- 4 dashes Worcestershire sauce
- 1/2 cup avocado oil
For salad dressing:
- 1/3 cup balsamic vinegar
- 1/2 cup extra virgin olive oil
- 1/2 tsp herbamare
- 1/2 tsp black pepper
- 1 tbsp maple syrup
- 1 tbsp Dijon mustard
- 1/4 tsp garlic powder
For salad:
- 1 head Romaine or leaf lettuce, torn into bite sized pieces
- 4 oz raw white mushrooms, thinly sliced
- 3 green onions, thinly sliced
- Crumbled bleu cheese
- Steak sliced or cubed
- Salad dressing
Directions:
For the steak: In a gallon ziplock bag, add Dijon, honey, salt, pepper, onion powder, garlic powder, 1/2 tsp paprika, red pepper flakes, Worcestershire sauce, and avocado oil. Mush around so everything gets mixed together and is emulsifying. Before you add the steak to the marinade, be sure to taste it to see if it’s balanced or if something needs to be adjusted and do so appropriately. Add steak and seal bag, removing as much air as possible. Move the steak around in the bag to ensure it’s coated properly. Place in fridge and marinade for 2-4 hours.
For the salad dressing: In a jar that you have a lid for, add balsamic vinegar, extra virgin olive oil, herbamare, black pepper, maple syrup, Dijon mustard, and garlic powder. Shake vigorously to mix together and emulsify. Be sure to taste the dressing to see if there’s anything else it needs. Place in fridge until you’re ready to assemble the salads.
For salad assembly: In a large bowl, toss together the Romaine or leaf lettuce, thinly sliced mushrooms, and thinly sliced green onion. At this point, you should transfer portions of salad to individual bowls before adding the steak, cheese and dressing. Once the salads are appropriately dressed, top with freshly ground black pepper and enjoy!
