Stovetop Stuffing Crusted Pork Chops

Adapted from Chrissy Teigen’s Cravings cookbook

Feeds: 2-3 people


Ingredients:

  • 4-5 pork chops, approximately 1 inch thick
  • 1 box stovetop stuffing mix
  • 2 eggs
  • 1 cup flour
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp kosher salt
  • 3 tbsp butter
  • 2 tbsp olive oil
  • Applesauce, to serve on the side

Directions: Start by setting up the breading station. Crack the eggs into a bowl and beat well. Next, on a plate or in a shallow bowl, add the flour and season with garlic powder, paprika, cayenne pepper, and kosher salt. Be careful not to over salt the flour mixture as the stovetop stuffing is a bit salty. Use a food processor and process the stuffing mix until find crumbs form. Place the stuffing mix into another bowl to complete the breading station.

Working with one chop at a time, dip it first into the flour, then into the eggs, and finally into the stuffing mix crumbs, being sure to press the chop into the crumbs for good adhesion. Continue with the rest of the pork chops until they’re all breaded and set aside for 5-10 minutes as it helps the breading stick better.

Melt the butter and add the olive oil to a large skillet on the stove over medium heat. Add the pork chops and fry until golden and crispy, about 3-4 minutes per side. Remove the pork chops from the skillet to a quarter sheet pan and make sure that the chops have reached their appropriate temperature of 140 degrees. You can always finish the pork chops in a 350 degree oven for a few minutes if they’ve gotten the appropriate amount of color but still need more cooking time. With this thickness of pork chop, the skillet cooking time should be sufficient.

In true Brady Bunch fashion, serve with applesauce on the side and a carb if desired!
