Ingredients:
- 6 oz elbow pasta
- 6 oz shredded cheddar cheese
- 6 oz evaporated milk
- Kosher salt, to taste
- 1/2-3/4 cup leftover taco meat, preferably ground chicken or beef
Directions: Follow the directions outlined here (Mac of the Beast Recipe) through until the Mac of the Beast is all the way done. When the mac is made, you can add your leftover taco meat and stir together. If your taco meat is saucy enough, everything should be well seasoned but you can always add additional taco seasoning if you want a little extra flavor.
Whenever we make taco meat, we just brown up a pound of any kind of ground meat, generally chicken or beef. Once it’s browned, add an ounce of taco seasoning which is the equivalent of one packet along with 3/4 cup of water. Simmer until everything is combined and the meat is coated in the sauce.
This is something we like to make when we’ve had tacos the night before and have a little extra meat to use up.
